Three years in a row? This year, the catch is low, and crab prices seem to be rising slightly. This product is sold through Kotobuki Shoten’s online shop, but they also sell it in stores. It’s their most popular item, and they probably only have about 250 packs in stock. Yeah, they sold out quickly last year, too. I’m keeping that much for now, so please buy one if you’re interested. There’s a layer of ice on it, and I’m defrosting it to remove it. But thawing it under running water will wash away the flavor, so the best way to enjoy crab is to defrost it in a plastic bag. [Music] If you defrost it in a bowl like this, it will melt quickly. A good rule of thumb is to peel the ice off with your hands. Like this. If you defrost it too long, it becomes mushy and difficult to cook, so it’s delicious at this temperature, packed with flavor. There are two types of snow crab: opilio and baldai, but this baldai is thick. These thick legs. Hey. This baldai is definitely the highest quality snow crab, even among our fishmonger industry. Plus, you can just pull it off like this. This is it! Hold it like this and shabu-shabu it, with ponzu or sesame sauce. It’s good. It’s the best. It’s the best. Shabu-shabu isn’t very exciting today, so let’s take a look at what’s in the fridge. Thank you. Yes. There are quite a few. Radishes. A fancy one. Let’s make something like an appetizer. Cheese.
