Ayu (Sweetfish) is in season from June to October.
It is known for its sweet, melon-like aroma and is often called the “Queen of Clear Streams.”
In Niyodogawa Town, Kochi Prefecture, the traditional “Tomozuri” (companion fishing) method is used to catch Ayu.
This rare fishing technique, found in only a few places worldwide, takes advantage of the territorial nature of Ayu by using a live Ayu as bait to lure and catch others.
Kochi’s Ayu has won multiple Grand Prix awards at the “Seiryu Meguri Kiki Ayu Kai” (Clear Stream Sweetfish Tasting Competition) and is highly praised both domestically and internationally.
Beyond the classic salt-grilled Ayu, it is also enjoyed in traditional dishes like “Segoshi” (thinly sliced sashimi-like preparation), “Sugata-zushi” (whole fish sushi), and “Kanroni” (sweet simmered Ayu).
Additionally, modern culinary innovations such as Ayu rice, Ayu pasta, and French cuisine incorporating Ayu have gained attention.
Amid a nationwide decline in Ayu populations, efforts are being made to protect and restore resources.
Measures include PCR testing to combat cold-water disease and river maintenance projects aimed at restoring the natural habitat of Ayu.
